Peanut Butter and Jelly Muffins

2 Cups flour
1/2 cup sugar
1 Tbsp. baking powder
1/4 tsp. salt
1 cup milk
1/2 cup peanut butter
1 egg
2 Tbsp. butter, melted
1/3 cup jam (any kind)

1. Preheat oven to 350* and spray mini-muffin tin with non-stick cooking spray.
(Makes 24 mini muffins/12 regular size muffins)
2. Stir together flour, sugar, baking powder, and salt in small bowl.
3. In another bowl, whisk together peanut butter, egg, and melted butter.
4. Add dry ingredients and stir until flour disappears. Be sure not to stir too much!
5. Fill muffin tins half full with batter. Top each with 1/2 tsp. jam, then spoon the rest of the batter on top.
6. Bake for 20 mins or until lightly browned.

Classic Waffles.

I've made these several times now and will not go to any other recipe for waffles.

2 cups flour
1 tsp salt
4 tsp baking powder
2 Tbsp sugar
2 eggs
1 1/2 cup warm milk
1/3 cup melted butter
1 tsp vanilla

Fluffy Pancakes.

1/2 cup flour
3 1/2 tsp baking powder
1 tsp salt
1 Tbsp sugar
1 1/4 cup milk
1 egg
3 Tbsp melted butter

Combine dry ingredients and then mix in all other ingredients until well combined.

These really are those fluffy pancakes and were very delicious!

Sausage and Egg Breakfast Pizza


Ingredients:

2 pkgs. Regular Flavor Jimmy Dean Pork Sausage, cooked, crumbled and drained
2 cans (8.5 oz each) refrigerated crescent rolls
2 cups frozen hash brown potato cubes, thawed
8 oz. (2 cups) shredded sharp Cheddar cheese
6 eggs, lightly beaten
1/3 cup milk
1 teaspoon salt
2 teaspoons black pepper
1/4 cup grated Parmesan cheese
1/3 cup each diced green, red and yellow bell pepper (optional)
1/2 cup thinly sliced green onions (optional)

Directions:

Preheat oven to 375 F. Separate crescent rolls into sixteen triangles. Place in two ungreased 12" rimmed pizza pans with points toward the center. In each pan, press rolls together, seal perforations and form a circle 1" larger in diameter than bottom of pan. Turn edges under to make a slight rim. Sprinkle cooked sausage evenly over each crust. Top with potatoes; add peppers and/or green onions, if desired. Sprinkle with Cheddar cheese. Combine eggs, milk, salt and pepper in small bowl: stir well. Pour half of the egg mixture evenly over each pizza. Sprinkle with Parmesan. Bake for 15-20 minutes or until eggs are set and crusts are golden.

Serving size:

Makes 2 pizzas

"Deceptively Delicious" Pancakes

I received Jessica Seinfeld's cookbook for Christmas and am loving it! I've made these pancakes a couple times now and have added something different each time. These recipes are not only good for the kids, but "husband healthy" as well!

1 c water
1/2 c sweet potato puree (now I've used pumpkin and carrots because thats what I have)
1/4 t cinnamon or pumpkin pie spice (optional)
1/4 t nutmeg (this is my add in, so it is optional)
1 c pancake mix
1 Tbs canola or vegetable oil

1. In large bowl, mix water, puree, and or spice if using. Add the pancake mix and stir just to combine-the batter should be lumpy.
2. When the pan is hot, add oil, and spoon the batter onto the griddle or pan using 1/4 c batter for each pancake.
3. Cook 2-3 min each side.

If your child has a hard time eating his/her vegetables or you want to add a little more nourishment to your meals, there are more recipes I can share or I can let you borrow the book. Just let me know.

Oven Pancakes

That is what Jeff and his family call them, apparently in Tara's house these are called German Pancakes. Either way, super great, full of butter and fabulously easy.

1 cup milk
2/3 cup flour
2 Tbs sugar
1/2 tsp salt
2 eggs

Put 1/4 cup butter in 9 inch pie pan. Place in preheated oven at 400 degrees until melted. Pour in batter (aka above items mixed together) and bake for 35 minutes until fluffy and golden Serve with lemon juice and powdered sugar, syrup or jam.

My mother in law doubles the recipe and puts it in a 9 by 13 pan. Also, it didn't take 35 minutes, it only took me about 18-20 minutes.

Caramel French Toast

I got this recipe from the Storyteller's Cafe in Disney's Grand Californian Hotel and Spa. I kind of tweeked it but not much. The carmel sauce for this recipe is what I use for ice cream.

Vanilla Sauce:
4 egg yolks
4 Tbs sugar
1 Vanilla been split & scraped
1/2 tsp. vanilla extract
Whisk together the yolks and sugar in a small bowl. In a saucepan, bring the milk and vanilla bean & extract to a low boil, then remove from heat. Add a little heated milk to the egg mixture to temper it, then add the tempered egg mixture to the heated milk. Simmer over medium heat for a few minutes, stirring constantly, until lightly thickened, but do not boil. Transfer to a bowl and set aside in an ice bath.

Caramel Sauce:
8 Tbs butter
1 cup brown sugar
1 1/2 cup heavy cream
Melt butter in a saucepan over medium heat. Add brown sugar and mix well. Add cream and bring to a simmer. Keep warm until needed

French Toast:
1/2 cup milk
2 eggs
1/2 tsp vanilla
1/2 tsp cinnamon
8 slices of texas style bread (I prefer French Toast bread, it is Texas style (thick) but it has vanilla and cinnamon already in the bread.
Mix first four ingredients. Dip bread in egg mixture and cook on griddle. This step can be replaced with your favorite french toast recipe.

This is how you assemble this delicious breakfast. Place one slice of french toast on your plate top with vanilla sauce, top with second piece of french toast. And for the creme de la creme, smother with the caramel sauce. Continue with remaining pieces of french toast.

This is wonderful to serve with strawberries to dip in the sauce left on your plate.

Egg Nog French Toast

This isn't really a recipe, but this morning we made french toast using egg not in place of the milk. It was delicious. I also threw in a pinch of nutmeg because I like the way it tastes with egg nog. We also used the light egg nog by Lucerne...onsale at Safeway right now.

Babzy's Breakfast Casserole

8-10 servings 55 min 10 min prep
1 lb bacon or 2 cups diced cooked ham
10 eggs
¾ cup milk
1 (32 ounce) package hash browns, thawed
2/3 cup green onions, chopped
3 cups cheddar cheese, shredded (divided)
1 teaspoon salt
½ teaspoon pepper
½ teaspoon garlic powder (any other spices you like, onion powder, dill or even steak seasoning, etc..)
1. If using bacon, cut into 1 inch pieces and cook until crisp. Drain and set aside.
2. Preheat oven to 350 degrees F. Lightly grease a large casserole dish.
3. In a large bowl, beat together the eggs and milk and seasonings. Stir in the bacon (or ham), hash browns, green onions, and 1.5 cups of the shredded Cheddar cheese. Pour into the prepared baking dish.
4. Bake in the preheated oven for 45 minutes, or until egg is set.
5. Sprinkle the remaining Cheddar cheese on top, and then broil for 3 to 4 minutes, or until the cheese is melted.
6. Remove from oven, and let sit 5 minutes before serving.

Vanilla Crepes


INGREDIENTS
1 1/2 cups milk
3 egg yolks *
2 tablespoons vanilla extract
1 1/2 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
5 tablespoons melted butter

DIRECTIONS
1. In a large bowl, mix together the milk, egg yolks and vanilla. Stir in the flour, sugar, salt and melted butter until well blended.


2. Heat a crepe pan over medium heat until hot. Coat with vegetable oil or cooking spray. Pour about 1/4 cup of batter into the pan and tip to spread the batter to the edges. When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden. Repeat with remaining batter.


3. Fill crepes with your favorite fruit, cream, caramel or even ice cream or cheese to serve.


*I used three whole eggs.
